Coconut Manjar (no cooking required)

Manjar is a popular dessert in Brazil, very easy to make. If you are fan of coconut, you will love this one.


Ingredients

  • 300 ml milk

  • 200 ml of coconut milk

  • 200ml of Nestle Reduced fat cream

  • 375g of condensed milk

  • 100g of shredded coconut (and some more to decorate if you like)

  • 24g of unflavoured jelly


Dried Prune Caramel

  • 200g of dried prune

  • 200g of sugar

  • 100g of water

  • bring it all to the boil and cook for about 10 min. Let it cool. Pour on top of your manjar when you plate it.



How to Make the Manjar

Blend all ingredients (except for the jelly) for about 2 minutes.


Dissolve the jelly in 1/2 cup of water. This is the part that took me a while to get right. The best way to do is to pour the water into the jelly and mix it well. Heat in the microwave for 10 seconds. Make sure the mixture is liquid, smooth and clear.


Pour the jelly into the blended mixture straight away.

Pour the mixture into a cake pan slightly greased with oil or butter. Put in the fridge for at least 4 hours
