Coconut Cake (Queijadinha)

This is one of the most delicious and easy to bake cakes out there!

And you guessed it: just blend it all and you are done!



Ingredients


  • 5 eggs

  • 1 can of condensed milk (395ml)

  • 1 can of coconut milk (395 ml)

  • 100g of shredded coconut

  • 100g of mozzarella cheese

  • 4 Tbsp of sugar

  • 1 cup of plain flour

  • 1 tbsp of baking powder (15g)


Instructions

  1. Preheat the oven at 180 for 10 min

  2. Grease a cake pan with butter and sugar (for this one I used a large loaf tin 28x13cm approx )

  3. Blend all the ingredients for approx 3 min and pour mixture into baking container

  4. Reduce the heat to 160 (if using a fan forced oven) and cook for about 30 min or until golden as per photo).

  5. Serve with coffee or tea.
